Things We Have Tried

Here are some of the things that we have been eating around here.
That was some yummy cereal. Strawberries were on sale at Sam's so we ate a lot of them. yum.
We tried spaghetti squash....Blake loved it and I hated it! Yuck.
We had some awesome vegan meatballs that I would definitely make again. The recipe came from a video that was annoying to watch, but again.... the meatless meatballs were delicious!!!
This was our first attempt at lentil walnut burgers.
They turned out pretty good, but I still think that I like black bean burgers.
This last picture was a vegan pasta bake that we made on superbowl sunday. It turned out pretty good.

Exercising.... Getting My Booty Handed to Me by A Pregnant Lady

So I guess that I have really gotten out of shape, and I did not realize just how bad it was until recently. I have been going on "walks" with a friend from church. I assumed that since she is about 8 months pregnant that these "walks" would be leisurely strolls around the block and back.... I was wrong!!! Girl walked circles around me and has dragged me on longer, and longer walks. All I can do is thank her. She has shown me just how out of shape I have become. I am worse off than I thought I was, but I am not discouraged. She is pushing me to do more, go farther and be better. Hopefully it will not take too long to get back to a comfortable place.

Feeling Great

So it has been less than a week, and I must say that I can already tell a difference. My body is responding really well to the new way of eating so far. I have not had milk in days, and my knee has stopped going out and swelling up after exercise!!! Crazy! I am so excited about this advancement that I don't even miss the dairy products, because I am afraid that if I eat them, then the pain will come back. Also on a side note I have already lost about 7 or 8 pounds since saturday (granted I was bloated and had pms that day), but all in all I feel great. I don't feel as tired during the day and I am sleeping better at night. It sounds crazy, but so far so good.

It is better than it looks!!

I know this may look odd, but it was delicious. This was breakfast this morning and it was a hit at this house. It is peanut butter and chocolate oatmeal. We got the original recipe from here http://livewell360.com/2008/11/peanut-butter-cup-oatmeal/
we will make this one again!

Best Smoothie of All Time

So we made a smoothie on Monday morning that was worthy of it's own post. It was that great. Let's get the rundown.
Isn't it pretty? It is a handful of kale, a handful of spinach, two handfuls of frozen fruit from the sam's club, a whole ripe banana, 5 or 6 extra strawberries, apple juice, and orange juice. (granted with the stuff we bought on monday I would probably add some flax meal or chia seeds.)

We don't have a fancy blender so there were still little bits of the leaves, but I could not even notice them. It was sooooo delicious! Best green smoothie that I have ever had.

Food That We Have been Eating


So here are a few of the things that we have been trying around hereon our journey....

Okay so this one is a little bit of a cheat since it has dairy in it , but we have a few things left in our fridge that we are using up. This was a delicious dessert, which is why I forgot to take a picture until half way through it. It is an open faced sandwich on ezekiel bread, then cream cheese from trader joes warmed and sweetened with some honey, and finally strawberries. This was beyond delicious!
and of course, salad. I am sure that salad will become a staple. This salad was a boring one, but we have made some better ones this week. This one had chick peas, and some light asian dressing.

From my cold dead fingers.....

So I assume that everyone has one type of food that they can not imagine giving up. I have no idea what food you can't live with out. Maybe you are a lucky person that has an unnatural love for some healthy food, well good for you. But the hardest thing that I will have to say goodbye to is......
CHEESE!!! I love me some cheese, and it is alarming how much cheese we go through in this house. I have no problem giving up meat, eggs, and even milk, but oh the cheese. This will take an adjustment. I have heard that the yeast flakes can help give things a "cheesy taste" but I wonder how far a cheesy taste can take me. More on this to come.
